I’ve decided to do a quick post on a basic pizza sauce, as it appears everyone really enjoyed the flatbread pizza recipe. Well, everyone except for my favourite perky friend from Italy, who has hung my picture on his Pizzeria’s wall of shame for taking a shortcut. I do partially agree with him. Anyway, I consoled myself by gorging down way more pizzas than my tummy could handle and then asked for his mercy; could you at least use a better picture of me on that wall? Some of you have tried to make the pizza but weren’t very sure about the texture of the sauce; the texture is very important because if the sauce isn’t thick enough the pizza will turn out soggy. I prefer to use jarred tomatoes but have used canned here as it was on hand.

I only use this sauce as a base for pizza. If you are looking for something to use with pasta, try this tomato concasse.

Here’s what you’ll need:

2 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, finely chopped

1 can of chopped tomatoes

1 bay leaf

1 tsp oregano

salt and pepper to taste

Heat the olive oil in a small pot on low heat. Add the onions, garlic, oregano and bay leaf and sauté everything  until the onions are soft and translucent about 5 minutes.

Then add the chopped tomatoes and leave it all to simmer, uncovered, on low for 20 minutes

until the mixture reaches a consistency resembling this

Now it’s ready to blend it smooth if you like!
