Beets & Avocado Salad-Video with Guest & A Sur La Table GIVEAWAY!

I recently made this salad for my niece Vanessa. She loved it so much, it is now one of her favorite salads. She loves salads. 

So, after watching me do a few cooking videos for the blog, she decided that she, too, wanted to be part of the “web show”, as she likes to call it.

Given that this is her favorite salad now, I showed her how to make it on her own. In the video below, Vanessa shows you how to recreate this simple and quick salad.  I think she did a terrific job!

As you can see, It’s healthy, quick to make (considering the beets are already cooked) and perfect for a summer afternoon. BUT, how about having it with lamb burgers? Oh, yea baby…That’s what I’m talking about!

Recently, I shared with you the secrets to making the perfect burger meat. Now, how about building that perfect burger? It’s no secret that each one of us has different tastes and therefore different ideas on what makes the perfect burger! So, I thought I’d share with you my idea of the perfect burger. 

If, I’m not having my burger with this salsa or salad then I revert to the classical way; Swiss cheese, pickles, French mustard, garlic mayo, mayo, mayo, some ketchup, lettuce, tomato and onion. Basically, everything but the kitchen sink!

Beetroot and Avocado Salad

Serves 4 as a side

prep: 10 minutes

cook: about 40 minutes, if cooking beets.

The cast of characters

200g beets, roasted or boiled and chopped into medium dice.

200g avocados, medium dice

Juice of half a lemon, or more to taste

1 green onion, finely diced

a handful of corriander, chopped finely- About 10g

30ml olive oil

The Nitty-Gritty

Place diced beets in a deep salad bowl

Slice avocado length wise

slice horizontally then vertically, without cutting the skin

squeeze some lemon to stop the oxidation and thus the avocados turning brown

scoop out the cuves with a spoon

Add the green onions, salt, pepper and corriander

Drizzle with olive oil

Mix well and serve up at a picnic, BBQ or on a juicy burger!

    I am so with you B ! I absolutely love chick peas, and always find myself adding them to any dish when possible, my latest was in a frittata with caramelized onions, mmm ! And hummus with lots of tahini is my fave. Love this post, makes me love chick peas even more. Can’t wait to try your recipe.

    huge huge fan of humus b’lahme. it’s not easy to photograph white foods, your photos came out lovely. i also like humus the way an egyptian friend has taught me- chickpeas, olive oil and a dash of cumin powder. sometimes the tahineh is too strong for me (only sometimes!) best wishes, shayma

    Ooooh – I think I’m in love! Chickpeas are fantastically versatile ( I also serve thm instead of mashed potato – mashed with some slow-cooked sliced onions in lots of olive oil with amoky paprika). I like the etymology lesson too – I’m a sucker for words :)

    I can see myself wiping this dish clean. I am a huge fan of Lebanese/Arabic food, and this is absolutely delcious ! The the kinda stuff that i love ! Awesome post, gr8 pictures I’m loving it !!!

    beautiful houmous. i like having houmous wraps or sandwiches. so yummy!

    I’m on a chick pea love fest at the moment. Too. I’ve been making a similar dish with pork mince served with rice. The lamb version sounds delicious.
