Soft Boiled Eggs with Smoked Salmon and Feta Cheese

After this morning’s breakfast I only think it fair to take back my words about my husbands food being boring, bland and dry! He made me eggs this morning and they were delicious! I think this whole food blogging thing has started to seep into his blood a little bit and now he wants to prove himself in the kitchen!! So here is what we had:

Soft Boiled Eggs with Smoked Salmon and Feta Cheese

  • 4 eggs- soft boiled
  • 2 smoked Salmon slices- torn up into smaller pieces
  • 2 tablespoons of crumbled feta
  • Cracked Pepper and Salt to taste
  • 2 basil leaves- finely chopped

Just in case you didn’t know how to make soft boiled eggs, the best way is to boil the water first and then gently and carefully drop the eggs in the pot with a spoon (you don’t want to break the shells.) For soft boiled eggs cook for 3 minutes thereafter and for hard boiled cook for 5 minutes. On each plate tear up a smoked Salmon slice into smaller pieces and then the add a spoon of the crumbled feta to each plate. Decorate with the chopped basil leaves. Once eggs are ready to your liking, remove and run under cold water for 30 seconds then peel. Place 2 eggs on each plate and season with salt and pepper to taste.
