Crispy Goat's Cheese w/ Baked Figs & Toasted Pine Nuts

Crispy, cheesy, nutty, fruity….what are you waiting for?
Here’s what you’ll need:
1 small log of goat cheese cut into 1/2 inch slices
1/4 cup all-purpose flour, in a bowl
1 egg, beaten in a bowl
1/2 cup dry bread crumbs, in a bowl
a handful of pine nuts
4 medium sized figs, slightly peeled open
2 tablespoons of olive oil
1) Heat the olive oil in a shallow frying pan and pre-heat the oven to 350F/180C/4G
2) place the figs on a baking sheet and bake in the oven for about 8 minutes, which is how long it will take to complete the below process.
3) Take the goat cheese slices and dredge in the flour, then dip into the beaten egg, finally coating it generously with the bread crumbs.
4) Place the slices in the frying pan and cook on each side for 3 minutes until golden brown
5) A couple of minutes before the cheese slices are ready, toss in the pine nuts and allow to toast till golden brown.

Decadent and savory, I’ve always appreciated the combination of goat cheese and figs, the pine nuts add another layer of flavor and crunchy texture – yum!

Thanks for sharing this recipe. I love warm goat cheese – I’ve always just rolled little disk in bread crumbs and baked them. It gets warm, but not crispy…your way sounds much more delicious. And baked figs…so yummy!
