Last week I shared a recipe of a very special chicken casserole. This week, I was lucky enough to pin down Arlette, a family friend of Portuguese origin, and get her cooking in the kitchen. She shared a delicious Portuguese fish recipe while I tried my best during the whole lovely experience to snap a picture of her, but to no avail. She said she would rather remain mysterious, like the dark side of the moon. I was not ready to get into a quarrel with this tough Portuguese cookie.

This is one of those simple and easy recipes that is just divine. The cod is cooked with tomatoes, bell pepper, onions, potatoes and plenty of parsley. Each bite is gloriously mouthwatering.

Portuguese Fish

Prep time: 10 minutes

Cook time: 25 minutes

  • 1kg fresh cod, fillet
  • 1 large onion, finely sliced
  • 1 large tomato, finely sliced
  • 6 medium potatoes, finely sliced
  • 2 bell peppers, finely sliced
  • 2 garlic cloves, finely sliced
  • 1 bay leaf
  • 1 bunch of parsley
  • 230ml dry white wine
  • 90ml Olive oil
  • 2 tablespoons paprika
  • Salt and freshly ground pepper

Large Sautee Pan or shallow casserole

begin by layering the pot with 1/3 of the onions

then 1/3 of the tomatoes

all of the potatoes

Another 1/3 of the tomatoes and onions, 1/2 the bell peppers, parsley and the bay leaf

Now add the cod

then add the remainder of tomatoes, bell peppers and onions and garlic

the rest of the parsley, salt and pepper and pour over olive oil

Add Paprika

drown in wine

then cover and place on burner with medium flame and let cook for 25 minutes

Serve with rice or alone with a green salad
