Tiramisu with Cranberry Sauce

Whoof! Feels like a million years since I last posted! Since my last post, Chris and I have decided to move to Brighton and be closer to the sea. So, for the last 5 days I have been scouring Brighton by foot, averaging 8+ miles a day, in search of that special flat next to the sea! Boy am I exhausted!
This Tiramisu recipe was supposed to be published early last week, but obviously I’m not super woman and so it didn’t! I’m too tired to explain myself… It’s sunday and I’m supposed to be relaxing so here it is…
P.S- This was part of the Christmas extravaganza meal and I took this photo at midnight on christmas eve, after maybe several bottles of wine. So, apologies on the bluriness. Try squinting you might be able to see it more clearly
Tiramisu with Cranberry Sauce
- 18 savoirdi biscuits (sugared sponge fingers)
- 300 ml espresso or strong coffee
- 100 ml kalhua, or tia maria
- 2 free range eggs
- 2 tablespoon caster sugar
- 300g mascarpone
- 150 ml double cream
- Cocoa powder to decorate
Cranberry sauce:
- 1 cinnamon stick
- 1 cup fresh cranberries
- 1/4 cup sugar
- 1/4 cup water
- 3 tbsp brandy
For the cranberry sauce: add all ingredients to a deep pot and cook for 20 minutes. Let cool. This can be made ahead and stores well in the fridge.
For the tiramisu:
In a mixing bowl, whip up the eggs and the sugar
In a food processor, whip up the mascarpone cheese and the double cream
Now add the egg and sugar mixture to it. let it mix for another 2 minutes
Mix espresso and kalhua together
Cover the bottom of each desert cup with a couple of the biscuits, making sure well covered

Drizzle each cup with a tablespoon of the espresso. Repeat this step with each desert cup until you have equally drizzled the coffee mixture across all 4 desert cups

Add the mascarpone mixture equally amongst all 4 desert cups

Let sit in the fridge for a couple of hours or overnight to settle.
When ready to serve, sprinkle each cup with cocoa powder

Add the cranberry sauce. the amount depends on taste

add a thyme leaf if you desire and voila!













I love the cranberry touch–adds a bit of tart spiciness to a sweet treat!
I’ve never see a fruit twist to the classic tiramisu, this looks delicious! I can almost taste the earthy richness combined with the sweet/tart cranberry and a touch of brandy – wow!
